Crawfish Season!

When we decided to move to TX, one of the biggest things Tony was excited to introduce to me, was crawfish. My only experience with them prior to TX was the bruise on my thumb from getting pinched by one in a stream in NJ. Little did I know, they are a much anticipated delicacy every spring here in TX, Louisiana, and all the surrounding areas. They are, in fact, just like miniature lobsters. You pull the tails off and dip them in butter. How can you go wrong with anything dipped in butter. True connoisseurs of crawfish like to "suck the head" which is exactly what it sounds like...taking the otherwise discarded body and head and sucking juice and who knows what else out of there. I think people do that just to look tough. I stick to the tails. Anyway, just as he was excited to introduce them to me, he now has two new guinea pigs, his children. Remember, you can't go wrong with anything dipped in butter, so you add that to the fact that you get to eat them by hanging on them with hammers and it's a child meal made in heaven! They love them! Mind you, you don't really need hammers to eat crawfish, but Ellie fell in love with "bang bang crabs" in Maryland, and was looking for something else to put her plastic hammers to use on, and viola, we have one of their most fun, most messy meals!
